Wild Fennel, aka Foeniculum Vulgare, is a perennial member of the Carrot family, Apiaceae. The plants are hardy down to zone 3, so can be grown in almost any climate. This variety of fennel has excellent culinary value. The seeds are highly aromatic and sweet. They’re a staple spice in Indian, Afghanistan, the Middle East, the Mediterranean, and more. The root is delicious when roasted, and also makes an excellent tea that aids in digestion. The leaves may be used fresh or dry in soups and stews, and pair well with fish and poultry. The flowers attract beneficial insects, so are quite useful to have in the garden.

Growing Instructions
Seeds may be started in early spring in pots, or directly sown outdoors around the time of last frost. They are best sown 1/8 inch beneath the soils surface. Once transplanted and established, These plants will live for many years assuming you live in zone 3 or warmer. Plants don’t require much once established other than water and mulch. These plants are vigorous, and just one or two plants can provide food and spice for a whole season. This plant prefers to grow in full sun, and soil that drains free from water. The plants are tolerant of deer, pest, drought, and flood.
