Cornflower, aka Centaurea Cyanus, is an annual member of the Daisy family, Asteraceae. It originates in Europe, but has become popular to grow in gardens around the world. The plants produce an abundance of flowers which are both beautiful and edible. the flowers grow on long stems, and make an excellent addition to bouquets because the flowers last for a long time and the unopened buds will bloom in a vase. The petals make an excellent addition to salads as they add great flavour and colour, the young unopened buds can be steamed or added to stir fry dishes, and the young shoots can be cooked similar to asparagus. Also, a blue dye can be obtained form the flowers, and is used to colour foods like rice and confections. An impressive feature of Cornflower is that different colour blooms can develop on the same plant, adding even more brilliance to their aesthetic.

Growing Instructions
Cornflower is a hardy and vigorous grower, and the seeds are best sown directly in the earth come early spring, but can also be started in pots to get a head start too. Sow seeds 1/8 inch deep, and keep moist until sprouts emerge. Once established, these plants will put out an abundance of beautiful and edible flowers until frost. Cornflower doesn’t require much other than water and mulch. Plants are disease, drought, flood, and deer resistant.
